Baked Veggie Rolls

I came across this recipe, AND I had to try it

The outcome: We are definitely going to make this again

What you will need to make these “veggie” rolls are:

Frozen veggies: beans / carrots / corn / peas combo

Bread – Toast slice bread

Potato – boiled and mashed

2 green chillies chopped

Ginger paste

Fresh coriander chopped

Lemon juice

Salt to taste

onion chopped


Preheat the oven to 180C

Boil and mash the potatoes, and mash the rest of the veggies a bit

Transfer to a bowl and add green chillies (chop them tiny, you don’t want to bite into a BIG piece), ginger paste, coriander leaves, lemon juice, salt and mix well

Heat oil in a pan and saute onions till light brown, add this to the bowl mixture and mix well

Remove the crusty sides of bread and soak them in water for 10 secs. Squeeze out excess water by gently presing between your palms

Place the mixture on one end of the slice and roll the rest over to cover the stuffing fimrly

Bake for approx 15mins or until the roll turns light brown. SERVE HOT!!!

NOTE: I luv cheese, so I sprinkled some parmesan on the rolls before I stuck it in the oven. The place smelled heavenly 🙂 GO CHEESE!
