I luv zucchini (koosa for my middle eastern readers), and I tried a couple of zuchinni recipes on Kingsley and he loves this veggie too. It cooks pretty fast as well.
- Green Chilli
- Mustard Seeds
- Cumin Seeds
- Chilli Powder
- Coriander Powder
- Garam Masala
- Ginger & Garlic Paste
Chop up the onions and the tomatoes. I decided to cut the zucchini into rounds this time because once the zuchinni cooks it can get all mushy if cut smaller.You can definitely cut it smaller and cook it!
Heat some oil in a pan. When its nice and hot add the mustard seeds and cumin. Next add in the onions, green chilli and the ginger and garlic paste. Let it all cook.
The tomatoes go in next, followed by the garam masala powder, coriander and chilli powder (Extra heat :)). I added a little more than a tsp worth of the garam masala. Add some water and the required amount of salt.
Let it cook and when its ready, the zuchinis should be really soft.
