Kingsley and I love including a noodle-ish meal in our menu; and Friday nights, man we always look forward to trying new things. I have never tried cooking egg noodles in coconut sauce!!!, maybe you have … if you haven’t – try it out and let me know what you think … 🙂
- Egg noodles
- Cabbage – shredded
- Carrots – thinly sliced
- Brocolli – seperated into florets
- lemon grass stalk – chopped
- garlic sliced – 7-8cloves
- onions- sliced
- red curry paste – 1tbsp
- coconut milk – 1 cup
- vegetable stock – 2 cups
- salt and pepper to taste
- light soy sauce – 2tbsp
- fresh coriander – 3tbsp
Heat the oil in a large wok. Add the lemon grass and red-curry paste and stir fry for a few seconds.
Add the garlic, onions and cook over medium heat until the onion softens. Next add in the veggies and mix it well. Lower your heat and let it all cook for another 5mins.
Add in your coconut milk, vegetable stock, salt, pepper and bring the mixture to a boil. When it starts to boil add the noodles and brocolli.
Lower heat and simmer for 5mins. Stir in the soysauce and add the coriander.
