Guacamole



Making guacamole reminds me of 2006 when my friends, Dori, Anna and Becca would make literally a kilo of guacamole and just chill over the weekend. This is a fun dip to make at home and its just SO GOOD!!!!! ….

Ingredients:

  • Well riped Avacados – chopped and mushed (or left chunky! your choice)
  • 3 tablespoons freshly squeezed lemon juice (1 lemon)
  • 1/2 cup small-diced red onion (1 small onion)
  • Tomato – diced
  • Garlic Clove – 1, minced
  • Salt – 1 tsp
  • Pepper – 1tsp
  • Coriander – chopped

Cut the avocados in 1/2, remove the pits, and scoop the flesh out of their shells into a large bowl. Immediately add the lemon juice, onion, garlic, salt, and pepper and toss well. Using a sharp knife, slice through the avocados in the bowl until they are finely diced. Add the tomatoes. Mix well and taste for salt and pepper.

Serve it with some corn chips ….
