Spicy Veggie Rice

Summary

    Ingredients

    1 packet Veggies – frozen veggies: Beans, Carrots, Potatoes
    1 large Onion – diced
    2 Tomato – medium chopped
    4 (depending on taste) Green Chillies –
    1 tbsp Garlic and Ginger paste –
    Mustard Seeds
    Fennel Seeds
    1 Bay Leaf –
    1 Cinnamon Stick – broken
    6 Cardamom –
    a few Cashews –
    1 tbsp Garam Masala –
    1 tsp Chilli Powder –
    1.5 tsps Coriander Powder-
    to Taste Salt
    1 tbsp Ghee (Clarified butter) –
    Oil
    2 cups of rice – washed and soaked in water

    Steps

    1. In a deep pot, heat some oil and add the mustard seeds
    2. When it starts popping add the fennel seeds, 1 bay leaf, cinnamon stick and the cashews
    3. Saute for a couple of minutes and add the green chillies and onions
    4. A few minutes later add the tomatoes
    5. Next the masala powders go in
    6. Add some water and let it cook
    7. When it comes to a boil, add the frozen veggies and some salt to taste
    8. Coat the base of a pressure cooker with some ghee
    9. Transfer the contents of the pot to the cooker, add the two cups of rice, 4 cups of water, some salt
    10. Give this a good stir, close the lid and let it cook for 2 whistles
    11. Let it rest until the pressure goes off
    12. Serve hot!
