Just like onions and garlic, we buy lots of potatoes because you can make lots of main and side dishes with potatoes. I had a couple of busy days, and these were easy to put together. The outcome was just delicious, the potatoes were cooked through and were so soft, but yet had a little crunch to it. Hope you enjoy this as much as we did 🙂

- In a pan, add the mustard seeds and cumin seeds to some heated oil
- When the mustard seeds start popping, add the onions, ginger and garlic and sauté
- Add the potatoes and a couple of minutes later, add the curry and chilli powder
- Add some salt and gently toss and put a lid on
- I did not want the potatoes to burn, so I put the fire on low, and I kept the cup of water handy and added as and when I thought it was starting to brown up at the bottom of the pan
- Once done, it will be nice and soft with a little crisp to it
- Serve warm! They are really yummy and sure to vanish very soon 🙂
