Yummy Potatoes

Just like onions and garlic, we buy lots of potatoes because you can make lots of main and side dishes with potatoes.  I had a couple of busy days, and these were easy to put together. The outcome was just delicious, the potatoes were cooked through and were so soft, but yet had a little crunch to it. Hope you enjoy this as much as we did 🙂

Summary

    Ingredients

    3 Potatoes : medium diced into small chunks
    1 large Onion : chopped
    3 Garlic : minced fine
    1 tsp Ginger :
    Mustard Seeds
    Cumin Seeds
    1 tsp Curry Powder –
    1 tsp Chilli Powder –
    to taste Salt
    Cup of water
    to fry Oil

    Steps

    1. In a pan, add the mustard seeds and cumin seeds to some heated oil
    2. When the mustard seeds start popping, add the onions, ginger and garlic and sauté
    3. Add the potatoes and a couple of minutes later, add the curry and chilli powder
    4. Add some salt and gently toss and put a lid on
    5. I did not want the potatoes to burn, so I put the fire on low, and I kept the cup of water handy and added as and when I thought it was starting to brown up at the bottom of the pan
    6. Once done, it will be nice and soft with a little crisp to it
    7. Serve warm! They are really yummy and sure to vanish very soon 🙂
