Just like onions and garlic, we buy lots of potatoes because you can make lots of main and side dishes with potatoes. I had a couple of busy days, and these were easy to put together. The outcome was just delicious, the potatoes were cooked through and were so soft, but yet had a little crunch to it. Hope you enjoy this as much as we did 🙂
- Potatoes: 3 medium diced into small chunks
- Onion: 1 large chopped
- Garlic: 3 minced fine
- Ginger: 1 tsp
- Mustard Seeds
- Cumin Seeds
- Curry Powder – 1 tsp
- Chilli Powder – 1 tsp
- Salt to taste
- Cup of water
- Oil to fry
In a pan, add the mustard seeds and cumin seeds to some heated oil. When the mustard seeds start popping, add the onions, ginger and garlic and sauté. Add the potatoes and a couple of minutes later, add the curry and chilli powder.
Add some salt and gently toss and put a lid on. I did not want the potatoes to burn, so I put the fire on low, and I kept the cup of water handy and added as and when I thought it was starting to brown up at the bottom of the pan.
Once done, it will be nice and soft with a little crisp to it. Serve warm! They are really yummy and sure to vanish very soon 🙂
