Garlic Roasted Potatoes & Squash

During my college days, my friends and I always made roasted potatoes when we planned for dinners together or if we had other friends over. After a little bit of chopping, you put the ingredients in the oven and that was it – you can go around and do other things while the oven did all the work. I baked some chicken, and as in all cultures potatoes go well with chicken. I had some squash that needed to be used, so I chopped those up with the potatoes and it turned out as a great side dish. Kingsley was busy picking the squash off my plate too šŸ™‚
