Green Beans – A south Indian recipe

Here is an Indian recipe that gets the veggies in your meal. I have noticed this particular bean dish in many Indian homes, and both K and I have eaten this growing up. I went to the market and bought a bag of beans to add in the menu for our week, and one had to be the south Indian bean fry dish.. Give this a try if you are looking for an alternative GB recipe

Summary

    Ingredients

    Green beans (trimmed)
    1 Onion : medium diced
    2 Green chillies : slit lengthwise
    Coconut : Shredded (fresh/frozen) or desiccated
    1 tsp Mustard seeds :
    1 tsp Cumin seeds :
    1 tsp Coriander Powder :
    1 tsp Chilli Powder :
    to taste Salt
    1 tsp Oil –

    Steps

    1. Add the mustard seeds and cumin seeds to some heated oil in a frying pan. Once the seeds start popping, sauté the green chillies and onions and cook until the onions are soft. Next add the GB’s, the coriander and chilli powder and some salt. Give this all a good mix, put the lid on, and cook until the GBS are soft. I put the flame on Medium low
    2. Once the beans are cooked through, add the coconut, give it a toss and serve!
    3. Simple eh 🙂 Get those GB’s in !!!
