Egg rice

Here is another quick fix meal that comes together in less than 30mins. I am sure you have those less than 30mins meals hidden in your brain somewhere, so if you have some amazing recipes I would love to use them sometime! Over the last few weeks my scale of busy-ness has increased in huge proportions that my meals have been last minute inspirations to take care of hunger. We’ve also had a few weeks of eating out, so the in-house cooking and eating took a slight dip. But now … the socializing calendar is back to normal for the coming week, unless of course you are calling us over, or you want us to cook for you! Anyways, this is a quick egg rice meal that you can put together if you have the two main ingredients: eggs and rice.


  • Eggs: 3 whisked well
  • Rice: 2 cups of rice cooked
  • Onion: 1 medium diced


  • Soy Sauce: 1 tbsp
  • Chilli Powder: 1 tsp
  • Coriander Powder: 1 tsp
  • Sesame Oil
  • Salt to taste
  • Spring onions to garnish

In a wok or a sauce pan, sauté the onions in some sesame oil. When the onions go soft, add the whisked eggs and add the seasoning and cook the eggs like you would make some scrambled eggs. Once cooked through, add the rice, some soy sauce and salt. Give it a good and gentle toss, so the rice does not get mushed.

Transfer to a serving bowl and garnish with some spring onions before serving.
