This is the first year that Christmas is happening during the middle of summer for me. Over the last few weeks, I was reminded of spending time with friends and family around the tree, singing christmas carols at church and being a part of a spectacular Christmas extravaganza in Kuwait. I decided to bake some sugar cookies though sugar cookies reminds me of all the sweet baking I have done each year in my parents kitchen.
- 2 3/4 cups all purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1 cup butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 tsp vanilla extract
Sift together the flour, baking soda and powder and set aside.
In another bowl, cream the butter and sugar together until smooth. Beat in the egg and vanilla and slowly blend in the dry ingredients.
On a non-stick baking sheet, roll teaspoonsfull of dough into balls and place them on the sheet. Bake for 8-10mins in a preheated oven at 190C/375F. Remove and allow it to cool down before biting into them!
