Banana Nut Muffins

This particular recipe reminds me of living in a cottage during my junior year in college. It was a weekend of lots of reading and paper assignments, so the entire house was dead silent. It was a snowy Holland evening and my Yurima track (Kiss the rain) suddenly got interrupted with the need for some friend time in Becca and Anna’s room. Anna then discovered she had lots of over riped bananas and we ended up baking 30+ banana muffins. We had lots of over-ripe bananas here in our place this weekend, so I ended up making some banana nut muffins. I absolutely love this recipe, the muffins were just soft and perfect

Summary

    Ingredients

    1 1/2 cups All purpose flour –
    1 1/2 tsps Baking powder –
    1/4 tsp Baking soda –
    1/8 tsp Salt –
    2 Egg whites –
    3/4 cups White sugar –
    1 cup Mashed bananas –
    3 tbsps Oil –
    1 tsp Lemon Zest –
    1/4 cups Chopped walnuts –

    Steps

    1. In a big bowl, mix all the dry ingredients: Flour, Baking powder, Baking Soda, Salt and Sugar
    2. In a separate bowl, whisk the egg whites and add the oil and lemon zest
    3. Pour this into the other bowl, and blend it well with the dry ingredients
    4. Add the mashed bananas and chopped walnuts and blend to form a thick batter
    5. Pour the batter into a non-stick muffin pan and bake for about 20-25mins in a preheated 350F/175C oven
    6. Once baked, set aside to cool before serving
