Looking for a weeknight dinner solution? Well I’ve got one! This is a tasty, nutritious and healthy pizza prepared with a combination of spinach and chikcen. With a few store bought ingredients, you are on your way to making your weeknight dinner. I am definitely bringing this back to the dinner table. It was easy to put together and we loved it!
Pizza base – store bought (unless you have the time to make it at home :))
Spinach – fresh or frozen, roughly chopped, 1 medium bunch
Onion – 1 medium chopped
Garlic – 4 cloves minced fine
Mixed herbs – 1-2 tsp (Italian or anything of your choice)
Diced Tomato in Tomato juice – 1/2 cup
Parmesan cheese – grated ( go with what you like)
Preheat the oven to 200C. Heat some olive oil in a fry pan. Saute the garlic and onion until the onions are soft. Toss in the mince, the mixed herbs and salt and cook on medium heat. This should take about 10-15mins. In the last minute, toss in the chopped spinach just so the spinach wilts a bit and does not get all soft and mushy.
After you gotten through this, its time to prep your pizza. Place the pizza base on a baking sheet. Spoon over the tomato chunks and the sauce on the base. Next add a generous quanity of the spinach and chicken. And finally add the parmesan cheese.
Then into the oven it goes and bake until the cheese has melted.Remove from the oven and slice into 6 or 8 pieces and serve immediately.
