Easter Jaffa Cupcakes

I have been in cupcake mode lately, and considering that Easter is a couple of weeks away, I wanted to make some Easter cupcakes. These cupcakes are soft and are infused with fresh oranges and a dash of vanilla and topped with a tangy icing and chocolate eggs. These cute cupcakes will be both an adult and kid favorite, so give it a try! 🙂

Summary

    Ingredients

    150 gms Butter –
    3 Eggs –
    3/4 cup Caster Sugar –
    1 tsp Vanilla Essence –
    2 Zest of navel oranges
    2 Juice of navel oranges
    1 1/2 cups Self-rising flour –
    1/4 cup Rice Flour –
    Icing :
    50 gms Butter –
    1 cup Icing sugar –
    Grated zest of an orange
    1 Juice of navel orange

    Steps

    1. Preheat the oven to 180C
    2. Cream the butter, caster sugar and vanilla until it is soft and ribbon like. Stir in the orange zest and add the eggs one at a time. Add the flour, rice flour and add the orange juice and mix well
    3. Spoon the batter into the muffin pan and bake for 20mins or until the cup cakes are done. Allow to cool on a wire rack while you make the icing
    4. For the icing, beat the butter, icing sugar, orange zest and juice until soft and fluffy. Using a icing bag with a star tip draw a circle on top of each cupcake to create a nest and decorate with three or more easter eggs
    5. DONE!
