Time to indulge in yet another recipe from the Malabar region.Pathiris are pancakes made from roasted rice flour and are usually served at breakfast or dinner with any kind of meat gravy.
Roasted rice flour – 1 cup
Water – 1 cup
Salt as required
Roast the cup of flour on low heat. Boil a cup of water and add a little salt and slowly add it to the rice flour, stirring continously. Let the rice mixture cool down and then knead the mixture well until a smooth dough is formed. Divide into lemon sized balls and roll them like chapathis and use some dry rice flour if it gets sticky. Roll it out as thin as paper.I used a lid to make an almost perfect circle 🙂
Heat a pan on medium heat and cook the pathiri for 30 seconds on one side and then flip it over and cook it for another 30 seconds. The pathiri will puff up.
Serve hot with any gravy – I served it with chicken gravy and we had this for dinner.
