Egg Parata

One of the many sights and sounds of the food scene in South India is the kothu parata. The youtube video below should give you an idea of how it is done. I obviously did not do it this way in my kitchen haha. It was a week night, and we were starving, so some frozen paratas came to the rescue for this quick fix yet delicious meal.

Onion: 1 chopped fine
Eggs: 5 whisked together
Ginger: 1/4 inch minced fine
Garlic: 2 minced fine
Green chillies: 2, chopped
Turmeric Powder: a pinch
Coriander Powder: 1/2 tsp
Chilli Powder: 1/4 – 1/2 tsp
Curry leaves
Paratas: Frozen or home made – 4

To some heated oil, add the curry leaves and onions, and saute until the onions have softened. Next add the ginger, garlic and green chillies and let it cook. Add the three masala powders, and allow it to cook until the masala smell is gone. Pour the whisked eggs and cook it like you would cook scramble eggs. Season with salt and pepper.

Cook the paratas as the eggs cook and though it may be hot roughly chop or rip the paratas and toss it with the egg mixture and mix it all up.

Garnish with some coriander leaves, and serve it hot with some raita or even tomato sauce.
