When I came across this recipe, I HAD to bake it. It was just so easy that I got my preggie self to the kitchen and got it all together. So glad to have a well stocked pantry! One of our neighbours is planning on stopping by to check out the baby’s room before they head out on their vaca, so I am definitely going to share some of this cake with them! Well let’s hope I don’t eat it before they come over 🙂 haha … Trust me if you are into chocolate and have a mega craving or just looking for a chocolatey recipe, you have GOT to try this! This recipe is adapted from Piece of Cake by Camilla V Saulsbury.
Semi-sweet chocolate chips – 1/2cup
Unsalted butter – 6 tbsp
Instant Coffee powder – 1 tsp
Plain flour – 1.25 cups
Sugar – 3/4 cups
Baking Soda – 1/2 tsp
Salt – 1/4 tsp
Eggs – 2
Milk – 3/4 cup
Vanilla Extra – 1 tsp
Preheat your oven to 180C / 350F. Grease a 8″ baking pan
Since its a one-bowl chocolate cake, grab a large enough microwavable bowl and lets get started!
First, add the chocolate chips and butter and microwave for about a minute and a half until the mixture has melted. Then add the instant coffee powder.
Using a whisk, combine everything well. Even if there are any unmelted chocolate, whisking it further should melt it.
Next, add the eggs, flour, salt, sugar, milk, vanilla extract and baking soda. Continue with the whisking. I just used my Ikea plastic black whisk, you can go fancy by pulling out your electric one, this pregnant woman could not be bothered! 🙂
Once well combined, pour into your greased baking pan and bake for 25-30mins or until a tooth pick comes out clean.
Allow it to cool. Dust it with powdered sugar or serve it with some chocolate or toffee sauce.
