Chicken with Sun-dried Tomato Basil Sauce

These last few weeks have been amazing with the menu planning! I have been whipping out these new meal ideas and desserts, its been exciting trying out these new dishes, eating them is super cool too :). The latest thing I love buying are sun-dried tomatoes. Its just delish adding it to pasta dishes. Not so long ago I made this for a week night dinner and had left overs for lunch … it was yumm-o!

Summary

    Ingredients

    6 Skinless Chicken Tenders:
    1 Onion: medium minced
    1/4 cup Sundried Tomatoes: chopped
    2 cloves Garlic:
    1/4 cup Fresh Basil: chopped
    1 1/2 cups Chicken stock:
    2 tbsps Flour:
    1 1/2 tbsps Butter:
    1/2 cup Cream:
    Pepper and Salt for seasoning
    Pasta
    Olive Oil

    Steps

    1. Cook the chicken in the olive oil
    2. Sprinkle some pepper and cook until the chicken is cooked through
    3. In a saucepan, melt the butter
    4. To it add the onions and garlic and cook for a couple of minutes until its just soft
    5. Next add the chopped sundried tomatoes
    6. Then bring out your whisk, add the 2 tbsps of flour
    7. Slowly add the chicken stock and whisk away and make sure there are no lumps
    8. Add the cream, and continue whisking until the sauce thickens
    9. Finally add the cooked chicken and remove from the heat
    10. Once your pasta is cooked, top it with the sundried tomato basil chicken
    11. YUM!!!
