These last few weeks have been amazing with the menu planning! I have been whipping out these new meal ideas and desserts, its been exciting trying out these new dishes, eating them is super cool too :). The latest thing I love buying are sun-dried tomatoes. Its just delish adding it to pasta dishes. Not so long ago I made this for a week night dinner and had left overs for lunch … it was yumm-o!
Skinless Chicken Tenders: 6
Onion: 1 medium minced
Sundried Tomatoes: 1/4 cup chopped
Garlic: 2 cloves
Fresh Basil: 1/4 cup chopped
Chicken stock: 1 1/2 cups
Flour: 2 tbsps
Butter: 1 1/2tbsps
Cream: 1/2 cup
Pepper and Salt for seasoning
In a saucepan, melt the butter. To it add the onions and garlic and cook for a couple of minutes until its just soft. Next add the chopped sundried tomatoes.
Then bring out your whisk, add the 2 tbsps of flour. Slowly add the chicken stock and whisk away and make sure there are no lumps. Add the cream, and continue whisking until the sauce thickens. Finally add the cooked chicken and remove from the heat.
Once your pasta is cooked, top it with the sundried tomato basil chicken. YUM!!!
