As a family we love Quesadillas. It is always my week night quick and easy meal option. My usual choice of meat for quesadillas is beef but this time around (thanks to quickneasyrecipes) I decided to use chicken. Absolutely loved the outcome, Mr.K loved it too – which is always great cause this is definitely going to be made for dinner again!
Cooked and seasoned chicken breast – 2 cups
Onion – 1 cup diced
Red capsicum – 1 cup diced
Red pepper flakes – a pinch or a couple of pinches
Garlic clove – 1 minched
All purpose flour – 1 heaping tbsp
Chicken stock – 3/4 cup
Spinach- 4 cups coarsely chopped
Cannellini beans – 1 can
Salt & Pepper
Shredded cheese – a combination or one favourite of you choice
I cooked the diced chicken with some mexican spices.I just found the flavours blended well with everything else that went to this dish. If you find another spice that works well, you can use that but just make sure its well flavoured and spiced. In a large skillet saute the onions and red capsicum until they have softened. Next add the garlic and saute for couple more minutes.
Sprinkle the tbsp of flour and stir to combine. Allow it to cook for a few minutes until the flour looses its raw taste. Whisk in the chicken stock and keep stirring until it is bubbly and smooth. Add the spinach and cook until the spinach has wilted. Finally stir in the cooked chicken and cannellini beans and remove from the heat.
Next, place the tortilla on a large skillet and spread cheese over the tortilla. Spread the chicken-spinach-bean mixture on one half of the tortilla. Keep an eye on the underside of the tortilla, it has to brown a bit but not lots, flip the half with just the cheese over the side with the chicken mixture. Remove from heat and cut into slices.
