Chicken, Spinach And Cannellini Bean Quesadillas

As a family we love Quesadillas. It is always my week night quick and easy meal option. My usual choice of meat for quesadillas is beef but this time around (thanks to quickneasyrecipes) I decided to use chicken. Absolutely loved the outcome, Mr.K loved it too – which is always great cause this is definitely going to be made for dinner again!

Summary

    Ingredients

    2 cups Cooked and seasoned chicken breast –
    1 cup Onion – diced
    1 cup Red capsicum – diced
    pinch or a couple of pinches Red pepper flakes – a
    clove – 1 Garlic minched
    1 heaping tbsp All purpose flour –
    3/4 cup Chicken stock –
    4 cups Spinach- coarsely chopped
    1 can Cannellini beans –
    Salt & Pepper
    Oil
    Flour tortillas
    one Shredded cheese – a combination or favourite of you choice

    Steps

    1. I cooked the diced chicken with some mexican spices
    2. I just found the flavours blended well with everything else that went to this dish
    3. If you find another spice that works well, you can use that but just make sure its well flavoured and spiced
    4. In a large skillet saute the onions and red capsicum until they have softened
    5. Next add the garlic and saute for couple more minutes
    6. Sprinkle the tbsp of flour and stir to combine
    7. Allow it to cook for a few minutes until the flour looses its raw taste
    8. Whisk in the chicken stock and keep stirring until it is bubbly and smooth
    9. Add the spinach and cook until the spinach has wilted
    10. Finally stir in the cooked chicken and cannellini beans and remove from the heat
    11. Next, place the tortilla on a large skillet and spread cheese over the tortilla
    12. Spread the chicken-spinach-bean mixture on one half of the tortilla
    13. Keep an eye on the underside of the tortilla, it has to brown a bit but not lots, flip the half with just the cheese over the side with the chicken mixture
    14. Remove from heat and cut into slices
    15. Serve immediately
