Well …. I guess its time for an apology again for not blogging for a few weeks now! Our amazing daughter D turned 1 and my month was swamped planning for that little celebration, everything else including this blog came on hold. We had a great time and now I am back to our usual routine that is definitely little less crazy than last month.
Here is a little yummy side dish that a friend of mine made a few mos ago when we visited her place for lunch. It’s so simple but yet so flavourful and is the kind of dish that will be gone seconds after you serve this.
Mini Sweet peppers – cut into half, seeds taken out if any
Garlic Cloves – minced fine
Shredded Cheese – I used cheddar
Preheat your oven to 200C
I haven’t mentioned the quantity of the cream cheese, coriander or garlic cloves because it really depends on how many peppers you’ve got. So if you are not good at eyeballing, just make sure you are not overly generous with the garlic cloves. There is absolutely nothing that can go wrong with this receipe!
In a bowl mix the cream cheese with the coriander and minced cloves. Spoon this stuffing into the sweet peppers. Top it with the grated cheese and bake until the peppers are cooked through and the cheese has melted and is a nice golden brown.
Serve immediately. Definitely recommend serving this shortly after its done. The warmer the yummier!
