Potato Podimas

Potatoes are a favourite with most people and this particular potato recipe that my mum makes will most definitely be a favourite in your household. Its not spicy  so the kiddies will enjoy this. Make a curry, some rice and these potatoes will make the perfect side dish…. and oh this is super easy and definitely not time consuming!

Summary

    Ingredients

    4 Potatoes , boiled and mashed
    3/4 tsp Turmeric Powder
    1 Onion diced
    1/2 tsp Mustard seeds
    1 tsp Urad dal
    2 Dried red chilly
    2 sprigs of curry leaves
    1 inch piece ginger , mashed
    pinch of A Asofetida
    to taste Salt
    Oil

    Steps

    1. Peel the boiled potatoes and mash them well
    2. Add the turmeric powder and season with salt and toss together
    3. To some heated oil, add the mustard seeds
    4. Once it starts sputtering, add the white urad dal, the chopped onions, dried red chilly, curry leaves and the ginger
    5. Sprinkle a pinch of asofetida and stir
    6. Once the onions have softened and everything else in the pan has fried, add the mashed potatoes and mix well to combine
    7. Your potato podimas is ready!
