Avocado Tuna Cups

I love it when Avocados are in season … they are so cheap!!! Been buying them every week to include it in our meals. I remember it being one of D’s first food that she absolutely loved, but that 19 mos old is not really very fond of eating it just as at the moment, might need to make her an avocado shake or something

I made this recipe earlier this week for K and I’s dinner. It’s been busy (I say that about every week I think) … It was one of those weeks, I wish I had a person to cook our food LOL … This was so quick to put together, definitely healthy and it was filling

Summary

    Ingredients

    2 Ripe but firm avocados
    1 tin of tuna
    1 Boiled egg
    1 small onion diced fine
    1/4 cup of chopped cucumber
    1/4 cup of cooked peas
    1/4 cup of cooked corn
    Handful of freshly chopped parsley and coriander leaves
    1 bag of salad leaves
    to taste Salt and Pepper
    Salsa Rosada :
    1/4 cup of Tomato Sauce
    1/4 cup of Mayonaise

    Steps

    1. In a bowl add all of the ingredients excluding the avocados, salad leaves, and the
    2. salsa Rosada. I mentioned 1/4 cup, but definitely didn’t use as much … its best to eyeball the amount
    3. of sauce and mayonaise
    4. Pour some of the salsa rosada into the bowl, and toss it so it coats the ingredients well
    5. Cut the avocados lengthwise, remove the seed and peel the avocados
    6. Fill the avocados with the tuna stuffing, and drizzle some of the salsa rosada on it
    7. Place the salad leaves onto a plate, and place the stuffed avocados on them
    8. Serve straight away
