Spinach & Tomato Tortellini

I have been at work for more than two weeks now, but for some reason, I still feel like I am on holiday mode. Spent three weeks travelling between the South and North Island here in NZ with the family, so its been slow getting back into it. As you probably already have noticed, I went a bit quiet on the blogging front, but trust me I am now baccccckkkkk and I’ve got a work night meal idea… This is great if you are still recovering from holiday mode, and don’t want to do a heck lot of cooking to put a meal on the table. Absolutely minimal chopping

Summary

    Ingredients

    Spinach & Ricotta Tortellini
    1 can diced tomatoes
    1 cup chopped spinach
    3 cloves garlic mashed
    2 tsps onion flakes
    1 tsp dried chilli flakes
    1 tsp dried basil
    1 1/2 cups cream
    2 tbsps all purpose flour
    1/4 cup grated parmesan
    to taste Salt and Pepper
    Oil

    Steps

    1. Bring a pot of water to a boil, and cook the tortellini until they are al dente. The package I bought said 7mins, so once the time had passed, I drained it
    2. While the tortellini was cooking, I made the sauce
    3. In a pan, add the mashed garlic cloves to the oil and saute until it is fragrant. Next add the can of tomatoes, the chopped spinach, basil, onion and chilli flakes and salt and pepper
    4. Give it a quick stir and cook on medium heat until it is all bubbly
    5. While this was cooking, I mixed the cream and all purpose flour and whisked it until it was smooth
    6. Add this mixture to the sauce and the parmesan cheese. Reduce the heat to low and allow it to cook until the sauce thickens
    7. Finally add the cooked tortellini and mix well to combine
    8. Serve! A side salad will go well with this!
