Greek Marinated Chicken

Happy Monday my fellow foodie friends!

As mentioned on Eaterspot’s facebook status today, with all the recent comments from friends and family that I haven’t been posting a whole lot of recipes lately ;), I have decided that this week its going to be a recipe a day week at Eaterspot! So Monday through Friday, its going to be a recipe idea every single day!!!! There will be vegetarian and non vegetarian options, so if you have friends who love food, get them to check out the website or LIKE the facebook page!

On to the recipe

I love having a nice long list of easy to make meals at anytime during the week or weekend. This dish definitely sits on the top of that list cause when you have a 22mos old running around your legs screaming mama cuddles, or mama num num (meaning food), you don’t want to do a heck lot of cooking in the kitchen. I made this for a saturday lunch and I loved that I could relax more and spend less time in the kitchen!

    10 Chicken legs
    1 cup plain yogurt
    2 tbsps garlic paste
    1/2 tbsp dried oregano
    1/2 tbsp dried parsley
    1 Juice of medium lemon
    to taste Salt and Pepper
    2 tbsps Olive oil
    180 C Preheat the oven to
    In a large bowl, mix all the ingredients excluding the chicken
    Then add the washed chicken pieces and mix to combine well


    1. Marinate for an hour or more in the fridge
    2. When you are ready to cook, place the chicken pieces in a well greased baking dish and bake until it is cooked through and golden brown on the outside
    3. Serve with a salad and some pita bread and you have a perfect meal!
