Tomato Artichoke Lentil Stew

When I came across this recipe, I had bookmarked it for our NZ winter that’s still months away, but just a few days ago, it was COLD and raining and it was definitely not summerish one bit. I had bought some artichokes for another recipe, and we usually buy kale, so after grabbing the rest of the ingredients from the pantry and the store, I began to make this stew. I loved how it turned out! šŸ™‚ Perfect for a very cold day

Summary

    Ingredients

    1 large onion diced
    1 can of red lentils
    2 cans of fire roasted whole tomatoes
    1 small jar of quartered artichoke hearts
    1/2 bunch of kale chopped into ribbons
    1 tbsp dried oregano
    1 tbsp dried basil
    1 bay leaf
    2 tbsps mashed garlic
    2 cups water
    to taste Salt and pepper
    2 tbsps olive oil
    Grated Parmesan cheese

    Steps

    1. Saute the onions in the oil in a large pot. Next add the mashed garlic, dried oregano and dried basil and continue to saute for a few more minutes
    2. Add the can of lentils, bay leaf, 2 cups water and season with salt and pepper and let it come to a boil
    3. Once it boils, add the kale, artichokes and tomatoes. Reduce the heat to low and simmer for 20minutes
    4. Season with more salt and pepper if needed
    5. Transfer to a serving bowl, and garnish with the grated parmesan cheese
    6. I added some bread to go along with the soup. Yummylicious šŸ™‚
