Cauliflower Alfredo Sauce

Alfredo sauce is a family favourite but its a very fattening sauce with the amount of butter and cheese that goes into it!!!!!!!!!! So not healthy to eat frequently if you are a pasta lover like my family.I have heard of using cauliflower as an option for making alfredo, so weeeeeeks ago I a bought a massive cauliflower at the saturday veggie market. I was quite excited about this project and I was pleasantly surprised by the outcome

This is definitely a no guilt sauce! ๐Ÿ™‚ I did not think it tasted weird, and you can eat as much as you want and know you don’t have to work out extra the next day to burn off a ton of carbs and fat ๐Ÿ™‚

I have added two variations to the recipe. The first one is with easy to find ingredients in most countries. You can add some grated parmesan to give itย a yummy lift

The second option is strictly Vegan! ๐Ÿ™‚

Summary

    Ingredients

    6 cups of cauliflower florets
    7 cups of veggie stock or water
    2 tbsps butter
    8 large cloves mashed to a paste
    1/2 cup milk
    to taste Salt and Pepper

    Steps

    1. Bring the stock or water to a boil. Add the cauliflower and cook until it is fork-tender
    2. While the cauliflower was cooking, saute the mashed garlic in some butter. Once it is fragrant but not brown, remove from the heat and set aside
    3. After the cauliflower is cooked, transfer the cooked cauliflower pieces to a blender
    4. I saved the cooking liquid and added a cup of it to the blender, and add the sauteed garlic,
    5. milk and the salt & pepper
    6. Blend until the sauce is very smooth. You can add more of the stock/water you used to cook the cauliflower if its too thick
    7. Add to some freshly cooked pasta and serve straight away. If you have left overs for the next day and it ends up being too dry, add some milk or water or olive oil to loosen it up!
    8. Vegan version ingredients:
    9. 6 cups of cauliflower florets
    10. 8 large cloves mashed to a paste
    11. 1/2 cup non-diary milk of your choice (ex:almond milk)
    12. 1/2 tbsp olive oil
    13. 1/4 cup nutritional yeast
    14. 1 tbsp lemon juice
    15. Salt and Pepper to taste
    16. Same process with cooking the cauliflower and sauteeing the garlics as the above recipe
    17. In the blender add the rest of the ingredients and blend to a smooth paste
