Tamarind & Orange Chicken

Ask my 2 year old what she would like to eat, be it first thing in the morning OR for afternoon tea, she will say Chicken and Sauce! Its her ALL time favourite… so with her fav food in mind, I like to find variations to make every time I make something relating to chicken

I went to a local malaysian restaurant few weeks ago and tried a chicken curry cooked with tamarind sauce, and have since then wanted to try a chicken recipe with tamarind, so here is one. I like how the sweet and sour totally balance out, and the chilli gives the lightest spice kick. You can add more chilli, but I did not because of the two year old. She totally went for it when it was served

Summary

    Ingredients

    8 – 10 A tray of chicken drumsticks, so about
    1/3 cup Olive Oil
    3/4 cup freshly squeezed orange juice
    2 tbsps Tamarind concentrate
    1 tbsp ginger paste
    1 tbsp garlic paste
    1/2 tsp chilli powder
    1/4 cup brown sugar
    to taste Salt and pepper
    In a bowl mix together all the ingredients excluding the chicken drumsticks

    Steps

    1. In a large bowl, place the well washed chicken drumsticks and pour the marinade over it. Toss gently so that the chicken drumsticks are completely covered in the marinade
    2. Let it marinate in the fridge for at least an hour
    3. Preheat the oven to 200C
    4. Place the chicken drumsticks along with the marinade in a baking dish and let it cook through … about 20-25mins
    5. If you don’t have an oven, cook it in a non-stick pan
    6. Once cooked, serve straight away
