Pesto Potatoes

4 potatoes, I left the skin on and cut them into chunks

Ingredients

4 potatoes, I left the skin on and cut them into chunks
2 tbsps olive oil
to taste Salt and Pepper
1 small tub of pesto
optional Grated Parmesan,

Steps

  1. Preheat the oven to 200c
  2. In a baking tray, place the diced potatoes. Drizzle with olive oil and season with salt and pepper. Bake until it is cooked through
  3. I then tossed the cooked potatoes with the pesto
  4. If you wish to add some grated parmesan, you can do so or just leave it as is.
  5. Serve immediately
