Parmesan Zucchini Corn

I love to cook with zucchini, so when it is in season here in New Zealand, I buy loads of it and cook lots of different things. When I came across a zucchini recipe on Damn Delicious, I had to make it right away! 🙂  This particular dish is a great side dish to go with anything be it a meat or non-meat meal. Summary

    Ingredients

    3 – 4 zucchinis diced
    1 cup corn, I used frozen
    2 cloves garlic mashed to a paste
    1/4 tsp dried basil
    1/4 tsp dried oregano
    1/4 tsp dried thyme
    tbsp A each of chopped cilantro and parsley leaves
    Grated Parmesan
    2 tbsps oil
    Juice of a lemon

    Steps

    1. To some heated oil, add the mashed garlic and zucchini
    2. After about a minute, the garlic will be quite fragrant, then add the corn, basil, oregano and thyme to the pan
    3. Season with salt and pepper
    4. Cook on medium heat, stirring constantly until the zucchinis are cooked through
    5. When it is almost cooked and ready, add the lemon juice, cilantro and parsley
    6. Also add the parmesan and give it good toss
    7. Transfer to a bowl and serve immediately
