Chilli Mushroom Fry

If you are looking for a delicious indo-chinese appetizer, this is your recipe. I have been craving some indo-chinese lately, so not so long ago on my grocery shopping trip, I grabbed some mushrooms to make this. This is a great recipe to serve up before your main or to go as a side dish with some fried rice! It also does have a nice spice kick making this a great dish to kick start any meal plan. yum… yum…

Ingredients

15 Mushrooms chopped
Oil for frying
Spring onion
Batter :
1 cup all purpose flour
1/2 cup corn flour
to taste Salt
1/2 tsp baking soda
Water
Sauce :
1 tbsp garlic paste
1 tbsp ginger paste
2 green chilli slit lengthwise
2 tbsps soy sauce
1 tsp vinegar
1 tsp chilli powder
1 tsp sugar
to taste Salt

Steps

  1. In a bowl mix together all the batter ingredients. To it add the chopped mushrooms.
  2. Heat some oil in a pan and fry the mushrooms in batches. Once they are nice and golden brown, drain and set aside.
  3. Pour out most of the oil out of the pan after frying leaving about a tbsp worth. Add the ginger garlic pastes, the chile and fry.
  4. Next add the soy sauce, vinegar, salt and sugar. I added just a little water as well. Mix well to combine and let it cook for a couple of minutes.
  5. Finally add the fried mushrooms back to the pan and toss well so that the sauce covers the mushroom pieces.
  6. Transfer to a serving plate and garnish with some spring onion.
