Chia Energy Bites

After almost a year of not blogging, We are back!!!! I’ve had to put blogging on hold due to family needing priority …. Lots of changes with life but I am still in the same city as when I started 7.5 years ago in this beautiful country called New Zealand.
I have been busy trying out recipes, so keep an eye out for all these recipes coming through!

Kicking us off are these No Bake Chia energy bites. Chia is talked about everywhere today. It’s so full of good stuff such as omega 3 fats, protein, vitamins and fiber…. These are great as a snack, for your lunch box, and perfect for breast feeding mums (especially in the middle of the night!). The combo of the rolled oats and chia seeds is perfect for your milk supply.

Ingredients:

  • 1 cup Rolled Oats
  • 1 tbsp Chia seeds
  • 1/2 cup Nut butter (Peanut / Almond butter)
  • 2 tbsp honey
  • 1/2 tsp vanilla extract
  • 2 tbsp desiccated coconut

In a bowl, mix together the dry ingredients: rolled oats, chia seeds and desiccated coconut.
In another bowl mix together the liquid ingredients: honey, nut butter and vanilla extract, pour this into the bowl of dry ingredients and mix well together.
Alternatively if you have a food processor, just dump all the ingredients together haha ….
Once well combined, roll them out into little balls.
Store in an air tight container in your fridge. Should be good to eat for about a week
