I am such a hummus lover! I prefer the home-made kind better than store bought as it’s so easy to make and home made ALWAYS tastes better! Most supermarkets here in New Zealand sell tahini, if not the Mediterranean stores should sell them.
I make hummus to go along with some meat, pita bread/wrap and a salad. If you aren’t a meat eater, a good veg stir fry, some of this delicious hummus and a wrap of some sort will make a great meal!
Ingredients:
1 can of chickpeas
4-5 sundried tomatoes
1 garlic cloves
1 tbsp tahini
1-2 tbsp olive oil
1/4 tsp salt
In a food processor, add all the ingredients together and blitz away to an almost smooth consistency. Make sure you add the brine in the can of chickpeas. To help loosen up the hummus, add a little water if needed.
Serve with pita chips or bagel crisps or serve it to accompany a meal!
YUM!
