Fried Rice

Fried rice is a great meal when you have kids and don’t have much time on your hands. You can make this vegetarian and then top it off with any meat of your choice if needed. I have made this a few times at home and it has always gone down well with the family members both the adults and the kid! If you need meals for the freezer this is great to freeze. It thaws out perfectly well and all it needs is a quick toss in a pan to heat through and its ready to eat!

Ingredients:

2 cups white rice, cooked 50%
3 eggs
1 onion chopped
1.5 cups veggies (frozen veg bag is perfect!)
3 tbsp soy sauce
2 tbsp sesame oil +1tbsp extra for frying

Salt to taste

Cook rice half way through, drain and transfer to a large tray to “air dry”. It should still have the raw crunch to it! Alternatively if you have  day old rice that needs to be used, this is the recipe to use it in! If you need to cook rice for this recipe then try to cook the rice and lay it out first thing in the morning or at least several hours before you need to make this.

When its time to make your dish, first cook the eggs. Whisk the eggs together and then fry it on medium low. I cook it like an omelette and  then cut it into strips and set aside. I prefer doing this than scrambling so you have strips of egg than having the eggs mushed into the rice. It makes the dish look good too!

Heat your wok or fry pan with 2 tbsp sesame oil. Saute until the onions are softened. Next add the frozen veggies and cook on medium low. The veggies I used were beans, carrots, corn, peas, capsicum. Use whatever veg your family prefers or whatever you have in your fridge! hah…

Take a large bowl and add the cooked eggs and the cooked veggie box to the bowl. Add the 50% cooked rice and pour over soy sauce. Toss it all together so everything is well combined. Season with salt if needed.

Add the remaining tbsp of sesame oil to the pan and once hot, add the rice and toss to fry well … I left it on the stove for about 10mins on medium low heat.

Serve with sweet chilli sauce.

If you want to give it a non vegetarian kick, add strips of cooked chicken on top or you can also add cooked bacon! yum! yum!!
