This classic chow mein dish is so easy to make with easy to find ingredients, most of which you might already have in your pantry / fridge. If you don’t have the ingredients at home, a quick trip to an Asian store or the Asian aisle in most supermarkets should have the ingredients. My daughter is a huge fan of Asian style noodles so when I made this the first time she wanted it for dinner, lunch and then dinner again haha!
As you will see below, I made this without adding any meat or extra veg, so its easy to adapt to make it vegetarian or non-vegetarian. If you are looking for a great weeknight or weekend meal or a pot luck meal idea, then you have got to give this a try!
Egg noodles / Chow Mein noodles
1/4 cabbage sliced thinly
1 onion sliced thinly
2 cloves of garlic minced fine
1/2 cup bean sprouts
4 tbsp oyster sauce
2 tbsp sweet soy sauce
2 tbsp dark soy sauce
1 cup water
2 tbsp oil
1/2 cup Bok Choy / spiralized or julienne carrots
1/4 cup Chicken strips
1/4 cup Beef Strips
1/4 cup Shrimp
Cook the egg noodles or chow mein noodles about 50%, drain and set aside.
In a large wok or non-stick pot, add the onions and mashed garlic to some oil. When the onions have softened, add the shredded cabbage.
Cook it for about 3-4 mins, then add the oyster sauce, the sweet & dark soy sauce and a cup of water.
Cover the pot and let this boil for a minute over medium low heat and then add the noodles.
Toss together and add the bean sprouts in the end to finish. Garnish with sesame seeds if you want.
Serve immediately and watch your family fight over the noodles hahah …
PS: If you are adding the optional ingredients to make it a non-vegetarian chow mein or vegetarian chow mein, I would add the meat or veg along with the cabbage.
