Kumara & Coconut Milk Purée

I was looking forward to making this purée. ALL week (yes I know, super weird but I enjoy making food if you haven’t noticed haha!). This puree is a bowl of creamy goodness. It felt like smooth velvety custard. It takes only THREE ingredients to make this delicious goodness for your baby and it’s jam packed with nutrients!
Kumara / Sweet Potato – Vitamin A, B6, B12, C, D, Calcium, Iron and Magnesium
Coriander Powder – Vitamin K,A,C , Iron and Copper
Coconut milk – Calcium, Potassium, Magnesium, Sodium, Phosphorus and Vitamin C, E, B1, B3, B5, B6

1 large kumara / sweet potato
1/2 tsp coriander powder 
1/4 – 1/2 coconut milk 
Peel and cut the kumara into chunks. Add the coriander powder. Cover it with just enough water and cook on medium low heat.
When it’s about 90% done, add the coconut milk. Though I have mentioned the quantity please eye ball the required amount you need depending on the consistency you are after.
Once cooked, let it cool  a bit before transferring to a blender and purée.
Serve immediately and store the rest in baby food freezer safe containers for another time.
