My daughter some times goes into an anti-green phase which makes eating green things like peas difficult! This pulao dish combines two veggies – corn that she loves any time day or night and peas with which she has a love hate relationship! I decided to put them together and she made no fuss and ate it. This is a great recipe for the family! It’s a bowl of flavourful rice that any person will enjoy. If you love ghee, you will love how this dish smells … ghee just brings it all together both in the flavour and smell! Absolutely fragrant! Make this to pair it with a curry, or some meat, a bowl of raita or make it for a potluck!
I served the pulao with some chicken, raita and papad… let’s just say there was a 5.5yr old in my house saying how delicious her food was!
1 large onion sliced fine
1/2 tbsp garlic paste
1/2 tsp ginger paste
1 cup frozen peas
1 cup frozen corn
3 cups rice
6 cups water
1 tbsp ghee
1/2 tsp cumin seeds
2 bay leaves
1 cinnamon stick
4 cardamom pods
Salt to taste
Begin by sautéing the onions in some ghee. As they start to soften, add the ginger and garlic pastes, followed by the cumin seeds, bay leaves, cinnamon stick, and cardamom pods.
Give it a couple of minutes and then add the peas and corn. Season with salt and mix it all together. Reduce the heat to medium low.
Next add the rice. Make sure you wash the rice ! I use the 1:2 ratio so for 3 cups of rice, I poured 6 cups of boiling water. Season with more salt if needed.
Put a lid on the pot and let the rice cook through. Have the heat on medium low so it slowly cooks through. You want evenly cooked fluffy rice at the end of it !
I served the rice with some home made chicken 65 and carrot raita.
It was finger licking good! Empty plates all around! Yay
