Chickpea Spinach Curry

Right when we were in the middle of Summer heat here in Wellington, we made a quick jump to Autumn and it has been cold and raining and we have had to turn on the heat pump and bundle up. Its looking like shopping for winter clothes might have arrived sooner than I thought and I will be making more curries and pulling out that slow cooker too čÖé If you are in the mood for a curry, this curry, which is vegan by the way, will be an excellent choice to make. Very┬áeasy (as my other recipes) and┬áthe curry is just yum! I like how the flavours aren’t over powering or spicy to make you cry – its mild and easy to eat even if you hate spinach!… Read More Chickpea Spinach Curry

Stuffed Eggplant

Though we are big fans of meat, our eating habits are leaned a lot towards vegan and gluten free during the week. I also prefer staying away from rice, so if you were to visit un-announced, you will be given a plate of food that has nothing to do with the Indian culture and there definitely won’t be rice! K and I enjoy our eating style just cause it has proven to be good to us, health and weight wise čÖé┬áso we have been doing that for most of this year. This dish comprises of our family┬áfavourite ingredients – eggplant and couscous. I love that I didn’t have to worry about calories too :)… Read More Stuffed Eggplant

Eggplant, Broccoli & Chickpea salad

Presenting to you a vegan gluten free dish … it has been a while čÖé … After my folks left, I slowly transitioned back into our vegan, gluten free meal plan especially since Christmas isn’t that far away and I wouldn’t mind cutting down on the calories a bit before loading it up again by Christmas time. I decided to serve this dish with some fish fillets to make it a filling dinner, but you can eat it just as :). I love the dressing =)… Read More Eggplant, Broccoli & Chickpea salad

Braised Coconut Spinach & Chickpeas with Lemon

Being a hard-core non-vegetarian, I do look forward to days when I would make something vegan like this recipe. At the end of each week, I take a little time and plan the menu for the following week, usually it will have meats over the weekend and then vegan or gluten free over the week. I came upon this recipe on thekitchn and thought it would be something that would work out in my household. Quick, easy and flavourful for a weeknight meal idea and I was sooooo right! Hope you get to try this simple but yet VERY filling meal… Read More Braised Coconut Spinach & Chickpeas with Lemon
