Crispy Potatoes with Green Beans and Eggs

As a family we loveeeeeeeeeeee brunch, ok my 14.5 mos old can’t agree with that, but she joins in with the excitement haha … I came across this recipe on delish.com and thought it would be great to make it for brunch one of these days, but it ended up being dinner one of the week nights when we had a full on day and this didn’t take too many ingredients to make. Quick and Easy is what I like!

Ingredients:
Onion: 1 medium diced fine
Green beans: Fresh or Frozen, 1 cup cut into 1-inch pieces
Potatoes: 4 or 5 cups diced
Red Pepper (Capsicum): 1 sliced
Garlic: 2 cloves mashed
Salt and Pepper to taste
Red pepper flakes: 1/8 tsp
Eggs: 4 or 5
Paprika
Oil
Garnish: Parmesan, Spring Onion and Coriander

Saute the onions in some heated oil in a large nonstick pan. When the onions start to soften, add the potatoes. Spread the potatoes in an even layer and cook, it needs to get tender and browned. This would take 15 or 20mins.

10mins into the potatoes cooking, add the green beans and the mashed garlic. Season with salt and pepper and sprinkle the crushed red pepper flakes.

After a few minutes, add the red capsicum slices and allow it to cook.

When the veggies are nicely cooked and the potatoes are brown but nice and tender, crack each egg gently over the potato-greenbean-capscium mix. I made a little hole in the mix and slowly dropped the eggs. Cover and cook on medium low until the egg yolks are cooked to your taste.

Once done, I garnished it with freshly chopped spring onions, coriander and some finely grated parmesan cheese…. yum!!!

Serve Immediately!
