Garlic Fried Rice

I am always on the quest to find new rice recipes, and that’s probably because I make a lot of curry for K. So having a dash of flavor in the rice accompanying the curry is always appreciated by him. This particular recipe is a very simple recipe and its kept to one main ingredient – Garlic. I know some of you are already thinking that you won’t make this because of the consequences garlic consumption has – BAD BREATH! But trust me, the flavour is very subtle, its hardly noticed and very much hidden by the vibrant color and flavor of the spring onion. So, lets get to the recipe 🙂

Ingredients:

  • Rice – 2 cups of cooked rice
  • Garlic – 2 tbsp finely minced garlic
  • Garlic Cloves – 5
  • Green onion – 3 or 4 chopped fine (separate green from white)
  • Butter / Oil – 1 tbsp
  • Salt to taste

Roast the garlic with some butter in skillet until deep brown. I had the flame on medium low, just so I don’t burn the garlic, and you don’t want burnt garlic in this dish. Once done, remove and set the garlic cloves aside.

In the same skillet, add the minced garlic and the white scallions and cook until they are aromatic and soft.

Add the cooked rice next and gently toss the rice along with the rest of the ingredients.

Garnish with the scallion greens and the buttered roasted garlic.

How simple was that?! You know you’ve got to try it …
